Course Overview
This session is designed to prepare learners for the accredited L2 Food Safety in Catering Award. Learners will utilise Moodle to access online course materials. The course will highlight the requirements of organisations to maintain safe food production and provision. Topics will include an introduction to cross-contamination, cooking, chilling and cleaning practices.
Upon completion, learners will progress onto the accredited course. This will provide the opportunity to achieve a nationally recognised food handling qualification. The intention is that learners will be developing their knowledge and skills in readiness to progressing towards an accredited qualification to support them either in their current position or to develop their CV towards finding employment. Developing the transferable knowledge and skills in a range of sectors, the introduction to food safety will increase confidence in individuals’ actions to maintain a safe and hygienic food preparation environment.
How long is the course?
3 hours over one session / week.
What will I learn?
By the end of the course, learners will be able to:
1. Consider recommended & legal safe temperatures for food processing & storage.
2. Discuss potential risks and hazards to food safety in the home and at work.
3. Determine recommended food handling practices and procedures.
4. List the 4 main types of food hazards.
5. Identify the 4 elements required for the growth of bacteria.
6. Select progression opportunities.
7. Access websites and course materials on Moodle.
How will the course be assessed?
Learners attend via the online platform on a set day and time. The session will be delivered live and learners will be supported to work through the course content. In addition to this, learners will be given access to Moodle (VLE – Virtual Learning Environment) so activities can be completed between sessions to assess for learning.
During the session they will be learning in a variety of ways:
Meeting other learners and teacher.
Question and answering techniques.
Actively listening, observing and discussing.
Completing online documentation.
Sharing what has been learnt on the course
Accessing Moodle, apps and websites for further learning opportunities.

So the course can start on time, it’s important to be ready to join your online course 15 minutes prior to the official start time.

Progression and Careers
The teacher will use a range of activities to review learner’s knowledge throughout the course and identify any gaps and additional information required
Learners will receive feedback in order to further develop their knowledge
Learners will assess their knowledge at the start of the course and again at the end against the learning outcomes. This allows them to identify how much they have learnt and where they might need to do further study or research.
Learners will also be supported to set an individual target(s) for the course based on personal goals and aspirations.
